As the third heat gets underway, Johnc reates potato pancakes with smoked trout, horseradish cream and beetroot salad. Without seeing the demonstration, the amateur chefs are given just a few minutes to taste this dish before being asked to write down exactly what is in it. They then have to try and recreate John's dish without a recipe.
